For an extra layer of flavor, sauté the kale with a clove of minced garlic before adding it to the egg mixture. If you don't have bacon on hand, cooked and crumbled sausage or ham would also be delicious. Feel free to experiment with different cheeses! Gruyere, Monterey Jack, or even a sprinkle of Parmesan would be great additions. To prevent the crust from becoming soggy, you can blind bake it for 10 minutes before adding the filling.
