In a large bowl, combine the celery, apple, cucumber, shallot, dates, walnuts, and 1/4 cup chopped Parmesan. (Prep time: 15 minutes)

In a separate bowl, whisk together the shaved Parmesan, lemon juice, Dijon mustard, olive oil, honey, grated garlic, salt, and pepper until well combined. (Prep time: 5 minutes)

Pour the dressing over the salad and toss gently until all ingredients are evenly coated. (Prep time: 2 minutes)

Serve immediately, or refrigerate for later. The flavors meld beautifully as it sits!

Toast the walnuts or pecans for a deeper, richer flavor. Simply bake them at 350°F (175°C) for 5-7 minutes, or until fragrant.
For a tangier dressing, add an extra squeeze of lemon juice.
If you don't have English cucumber, regular cucumber works just fine, just peel it first.
Feel free to experiment with other types of nuts, such as pistachios or almonds.
The salad can be made ahead of time and stored in the refrigerator for up to 24 hours. Toss again before serving.
