For a vegetarian option, omit the bacon and consider adding toasted sunflower seeds or pumpkin seeds for extra crunch.
The salad can be made ahead of time. However, the carrots will soften slightly as they sit in the dressing. If preparing in advance, consider adding the pecans just before serving to maintain their crunch.
