Prepare the Carrot Noodles: Using a vegetable peeler, mandoline, or spiralizer, shave or cut the carrots into long, fettuccine-like strands. Set aside. (5 minutes)

Sauté Aromatics and Ham: In a large skillet or sauté pan, melt the butter over medium-high heat. Once the foam subsides, add the minced onion and ham strips. Cook, stirring frequently, until the onion is softened and the ham is lightly browned, about 3 minutes.

Introduce the Carrots and Wine: Add the prepared carrot noodles, minced garlic, and white wine to the skillet. Reduce the heat to low, cover the pan, and simmer, stirring occasionally, until the carrot noodles are tender-crisp, about 8-10 minutes.

Create the Cream Sauce: Stir in the heavy cream and thawed peas. Bring the mixture to a gentle simmer. Reduce the heat to low, cover, and continue to simmer for another 5 minutes, allowing the sauce to thicken slightly.

Finish and Serve: Stir in the Dijon mustard. Season the dish with salt and freshly ground black pepper to taste. Serve immediately.

For a vegetarian option, omit the ham and add a pinch of red pepper flakes for a touch of heat.
If the sauce becomes too thick, add a splash of chicken or vegetable broth to thin it out.
Freshly grated Parmesan cheese makes a wonderful topping for this dish.
Consider adding some sauteed mushrooms for an earthy note.
