Follow The Directions

01

Step

Preheat the oven to 325 degrees F (165 degrees C). Line a 9-inch pie dish with one of the pastry crusts. (5 minutes)

02

Step

In a large bowl, whisk together the cornstarch, granulated sugar, cinnamon, nutmeg, and salt until thoroughly combined. Add the sliced apples, maple syrup, and whole egg. Stir until the apples are evenly coated. (10 minutes)

03

Step

Pour the apple mixture into the prepared pie dish. Cover with the remaining pastry crust, seal the edges by crimping or pressing with a fork, and trim away any excess dough. Cut several small slits in the top crust to allow steam to escape during baking. (10 minutes)

04

Step

In a small bowl, whisk together the egg yolk and water until well combined. Brush this egg wash evenly over the top of the pie crust. This will give it a beautiful golden sheen. Cover the pie loosely with aluminum foil and place it on a baking sheet to catch any potential drips. (5 minutes)

05

Step

Bake in the preheated oven for 35 minutes. Remove the aluminum foil and continue baking until the crust is golden brown and the filling is bubbly, approximately 15 more minutes. A paring knife inserted into the center should meet little resistance. (50 minutes)

06

Step

Transfer the pie to a wire rack and let it cool completely before slicing and serving. This allows the filling to set properly. (2 hours)

For the best flavor, use a blend of apple varieties. Tart apples like Granny Smith provide a nice contrast to the sweetness of the maple syrup.
If the crust starts to brown too quickly, you can tent it with aluminum foil during the last 15 minutes of baking.
Serve warm with a scoop of vanilla ice cream or a dollop of freshly whipped cream for an extra-special treat.

I was a bit intimidated by making pie crust from scratch, but the pre-made crust worked perfectly fine. The filling was so easy to put together.

Cooling it completely is key! I tried to cut into it too soon, and it was a bit soupy.
