Preheat oven to 450 degrees F (230 degrees C). Scrub the unpeeled potatoes and prick them several times with a fork; place onto a baking sheet. (5 minutes)

Bake in the preheated oven until the potatoes are easily pierced with a fork, 50 minutes to 1 hour. Remove, cool slightly, and peel. Mash the potatoes thoroughly with the buttermilk. Gently stir in the grated raw potato, flour, baking soda, salt, and pepper until just combined. Be careful not to overmix. (1 hour 15 minutes)

Melt the butter in a large skillet or griddle over medium heat. Scoop approximately 1/4 cup of the potato mixture per boxty into the skillet, gently flattening each into a 3-inch cake. Fry until golden brown and crisp, turning once, about 5 minutes per side. (20 minutes)

For a richer flavor, brown the butter before frying the boxty.
Serve immediately with a dollop of crème fraîche or a drizzle of Irish honey.
Boxty are best enjoyed fresh. If making ahead, keep them warm in a low oven.
