Prepare the slider rolls: Slice slider rolls in half horizontally. Spread 1 teaspoon of gourmet yellow mustard on the bottom half of each roll. Top with a dill pickle slice. Set aside. (5 minutes)

Caramelize the onions and crisp the bologna: Heat 2 teaspoons of extra virgin olive oil in a large skillet over medium heat. Add the sliced sweet onions to the skillet and cook for 1 minute. Add the quartered bologna wedges. Cook, stirring and flipping occasionally, until the onions are tender, translucent, and lightly caramelized, and the bologna is browned and slightly crispy on each side. (Approximately 8-10 minutes)

Assemble and serve: Add 2 bologna wedges on top of each mustard-and-pickle-topped bottom bun. Generously pile the caramelized onions on top of the bologna. Replace the tops of the slider rolls. Serve warm and enjoy immediately. (2 minutes)

For an extra layer of flavor, consider adding a thin slice of cheddar or provolone cheese to each slider during the last minute of cooking.
A sprinkle of smoked paprika on the fried onions adds a touch of smokiness that complements the bologna perfectly.
Serve with your favorite dipping sauce! A creamy sriracha mayo or a tangy barbecue sauce would be excellent choices.
