Follow The Directions

01

Step

In a chilled bowl, pour the heavy cream. Add 1/2 cup of confectioners' sugar and the almond extract. Using an electric mixer, whip until stiff peaks form. Gently fold in the sour cream until just incorporated. Be careful not to overmix. (Prep time: 10 minutes)

02

Step

In a separate bowl, combine the blackberries with the remaining 1/2 cup of confectioners' sugar. Toss gently to coat, allowing the berries to macerate and release their juices. Let stand at room temperature for 15 minutes, stirring occasionally. (Prep time: 15 minutes)

03

Step

In 8 elegant parfait glasses or dessert cups, create beautiful layers of whipped cream and sugared blackberries. Begin and end with a generous layer of whipped cream for a visually stunning effect. (Assembly time: 10 minutes)

04

Step

Garnish each parfait with a delicate strip of lemon zest, a scattering of fresh blackberries, and a sprig of fresh mint. Serve immediately or chill for later indulgence. (Garnish time: 5 minutes)

For an extra layer of flavor, consider adding a splash of blackberry liqueur to the macerated berries.
If fresh blackberries are unavailable, frozen berries can be used. Thaw them completely and drain any excess liquid before macerating.
The fool can be prepared ahead of time and stored in the refrigerator for up to 24 hours. Garnish just before serving to maintain freshness.
To prevent the whipped cream from deflating, ensure all your equipment (bowl and beaters) are thoroughly chilled before whipping.
