For a smoky flavor, add a smoked ham hock or a teaspoon of smoked paprika during the simmering process.
If you don't have white wine on hand, you can substitute chicken or vegetable broth.
To thicken the stew, mash some of the beans against the side of the pot with a spoon.
These beans are even better the next day, as the flavors have more time to develop.
Serve with white rice, avocado slices, sour cream and hot sauce.
