Follow The Directions

01

Step
5 mins

In a large pot or Dutch oven, combine the vegetable broth and frozen chopped spinach. Place over medium heat and cook for approximately 5 minutes, or until the spinach has thawed and softened.

02

Step
2 mins

Introduce the drained and rinsed dark red kidney beans, light red kidney beans, black beans (with their liquid), great Northern beans (with their liquid), and pinto beans (with their liquid) into the pot. Stir gently to combine all the ingredients evenly.

03

Step
1 mins

Add the vegetable oil, garlic powder, salt, and black pepper to the mixture. Adjust the seasoning to your liking, ensuring that the flavors are well-balanced and complement each other.

04

Step
30 mins

Reduce the heat to low, cover the pot, and let the beans and greens simmer for at least 30 minutes, stirring occasionally to prevent sticking. This allows the flavors to meld together beautifully, creating a rich and harmonious dish.

For a richer flavor, consider sautéing a diced onion and a clove or two of minced garlic in the vegetable oil before adding the other ingredients.
Feel free to experiment with different types of beans to create your own unique blend. Cannellini beans, chickpeas, or even lentils would be excellent additions.
If you prefer a thicker consistency, you can mash some of the beans against the side of the pot to release their starch.
This dish pairs wonderfully with a side of crusty bread or a dollop of plain yogurt or sour cream.
