Add the diced onion and cook until softened and translucent, about 5-7 minutes.

Stir in the minced garlic and cook until fragrant, about 1-2 minutes, being careful not to burn.

Pour in the crushed tomatoes, add the red pepper flakes and Italian seasoning. Season generously with salt and pepper.

Bring the sauce to a simmer, then reduce the heat to low and cook for at least 15 minutes, or up to an hour, stirring occasionally, allowing the flavors to meld and deepen. The longer it simmers, the richer the flavor. (15-60 minutes)

For a smoother sauce, use an immersion blender to partially blend the sauce after simmering. Be careful when blending hot liquids!
Add a pinch of sugar if the tomatoes are particularly acidic.
Fresh herbs like basil or oregano can be added during the last few minutes of cooking for a brighter flavor.
Feel free to adjust the amount of red pepper flakes to your desired spice level. Start with less and add more as needed.
This sauce can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
