Add any sliced mushrooms and onions to the skillet, adding more olive oil if needed. Cook over medium heat, stirring occasionally, until the onions are softened and translucent and the mushrooms are tender and lightly browned, about 5 minutes. (Cook time: 5 minutes)

Return the cooked chicken to the skillet with the vegetables. Pour the balsamic glaze over the chicken and vegetables. Reduce the heat to low and simmer gently, allowing the sauce to thicken slightly and the chicken to warm through, about 3-4 minutes. Be sure to stir occasionally to prevent sticking. (Cook time: 3-4 minutes)

For a richer flavor, use an aged balsamic vinegar.
