Follow The Directions

01

Step

Preheat oven to 350°F (175°C). (5 minutes)

02

Step

Lightly grease a 9-inch pie pan with olive oil. Arrange zucchini slices in overlapping layers in the pan. Drizzle with 1 tablespoon of olive oil and sprinkle with sea salt and Herbes de Provence. Repeat layering until all zucchini is used. (10 minutes)

03

Step

Bake in the preheated oven for 30 minutes.

04

Step

While the zucchini bakes, prepare the topping: In a small bowl, combine breadcrumbs, Parmesan cheese, and remaining 3 tablespoons of olive oil. Season with salt and pepper. (5 minutes)

05

Step

Remove zucchini from the oven. Spread the breadcrumb mixture evenly over the top. Return to the oven and bake for an additional 10 minutes, or until the topping is golden brown and the zucchini is tender. (10 minutes)

06

Step

Let cool slightly before serving. Enjoy hot!

For a richer flavor, consider adding a minced clove of garlic to the breadcrumb topping.
If you don't have Herbes de Provence, a blend of dried thyme, rosemary, oregano, and savory will work well.
Feel free to experiment with other cheeses like Gruyere or Pecorino Romano.
For a vegan option, substitute nutritional yeast for Parmesan cheese and ensure your breadcrumbs are vegan-friendly.
