Add the remaining 3 tablespoons of olive oil and bread crumbs to the food processor. Pulse until the mixture forms a coarse, slightly damp crumb. (3 minutes)

Evenly spread the herb and breadcrumb mixture over the top of the salmon fillet, creating a crust. (3 minutes)

For extra flavor, marinate the salmon in lemon juice, olive oil, and herbs for 30 minutes before baking.
If you don't have fresh bread crumbs, you can use panko bread crumbs for a crispier crust.
