Season the Beef (5 minutes): Generously sprinkle the sea salt, black pepper, dried parsley, and dried oregano evenly over the beef pot roast, ensuring all sides are coated.

Layer Ingredients in Slow Cooker (10 minutes): Place the seasoned roast in the bottom of a slow cooker. Arrange the potatoes, carrots, tomato chunks, and chopped onion on top of the beef.

Add Sauce and Liquid (2 minutes): Pour the tomato sauce and water (or beef broth) evenly over the beef and vegetables.

Slow Cook to Perfection (4 hours on High, or 6-8 hours on Low): Cover the slow cooker and cook on High heat for 4 hours, or on Low heat for 6-8 hours, until the beef is fork-tender and the vegetables are soft. The internal temperature of the beef should reach at least 190°F (88°C).

For a richer, deeper flavor, sear the beef pot roast in a hot skillet with a little olive oil before placing it in the slow cooker. This adds a beautiful crust and enhances the savory notes.
If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the slow cooker during the last 30 minutes of cooking.
Feel free to add other vegetables to this pot roast, such as celery, parsnips, or mushrooms.
Leftovers are even more delicious the next day! Store in an airtight container in the refrigerator for up to 3 days.
