Cook, stirring occasionally, until mushrooms are browned and onion is translucent, about 7 minutes. Add radicchio, garlic, and sage; cook until radicchio wilts and garlic becomes fragrant, about 3 minutes. Remove from heat and stir in the cooked pasta.

In a saucepan over medium-high heat, melt butter. Whisk in flour and cook until golden and fragrant, about 2 minutes. Gradually pour in milk, whisking constantly to prevent lumps, until the mixture comes to a boil and thickens, about 5 minutes. Remove from heat and whisk in Asiago cheese, heavy cream, 1 cup Parmigiano-Reggiano cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until the sauce is smooth and creamy.

Pour the cheese sauce over the pasta mixture and stir gently until everything is evenly coated. Transfer the mixture to the prepared baking dish. Sprinkle the remaining 1/2 cup Parmigiano-Reggiano cheese and panko breadcrumbs evenly over the top.

Bake in the preheated oven until bubbly and golden brown, about 30 minutes. For an extra crispy topping, broil for the last 1 minute, watching carefully to prevent burning.

For a deeper flavor, consider using a mix of cremini and shiitake mushrooms.
Freshly grated Parmigiano-Reggiano cheese is highly recommended for its superior flavor and texture.
If you don't have radicchio, you can substitute with escarole or another slightly bitter green.
Adjust the amount of salt and pepper to your liking. Taste the sauce before adding it to the pasta and adjust accordingly.
