For a richer flavor, use dark soy sauce instead of light soy sauce. If you don't have fresh ginger on hand, you can substitute 1/2 teaspoon of ground ginger. This marinade also works well with tofu or vegetables. For best results, pat the fish or chicken dry with paper towels before marinating.
