Step

In a large skillet over medium-high heat, cook chorizo, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes. Remove chorizo from the skillet and set aside.

Add bacon grease to the same skillet over medium-high heat. Add diced potatoes and cook, stirring occasionally, until potatoes begin to soften, about 8-10 minutes. Add chopped onion and serrano pepper (if using); cook and stir until potatoes are fork-tender, onion is translucent, and serrano pepper is soft, about 2-6 minutes. Add eggs and cooked chorizo; stir until cooked and completely incorporated into the potato mixture, about 5 minutes. Season with salt and pepper to taste.

Warm tortillas in a large skillet or directly over a gas flame until pliable. Place approximately 1/3 cup of the chorizo-potato mixture down the center of each tortilla. Fold in the sides of the tortilla, then roll tightly into a burrito shape. Mist each burrito lightly with avocado oil cooking spray.

Preheat air fryer to 400°F (200°C). Place burritos in the air fryer basket, being careful not to overcrowd. Air fry for 4-6 minutes, or until golden brown. Flip each burrito, mist again with cooking spray, and continue to air fry for an additional 2-4 minutes, or until the burritos are crispy and heated through.

For extra crispy burritos, lightly brush with melted butter before air frying.
Feel free to add other ingredients such as cheese, beans, or salsa to customize your burritos.
These burritos can be assembled ahead of time and stored in the refrigerator for a quick breakfast during the week. Just add a minute or two to the air frying time.
Adjust the amount of serrano pepper according to your spice preference, or omit it entirely for a milder flavor.
