In a nonstick skillet, combine diced apples, brown sugar, butter, and cinnamon. Cook over medium heat until the apples soften, releasing their sweet aroma (approximately 5 minutes).

In a small bowl, dissolve cornstarch in cold water. Stir this mixture into the apple mixture. Continue cooking until the sauce thickens to a glossy consistency (approximately 1 minute). Remove from heat and allow the filling to cool slightly as you prepare the crust.

Unroll pie crust on a lightly floured surface. Gently roll it out to smooth any creases. Cut the dough into rectangles sized appropriately to fit two at a time in your air fryer. Aim for 8 equal rectangles, re-rolling any scraps as needed.

Lightly wet the outer edges of 4 rectangles with water. Spoon the cooled apple filling into the center, leaving about 1/2 inch border. Roll out the remaining 4 rectangles slightly larger than the filled ones. Carefully place these on top of the filling and crimp the edges with a fork to seal, creating beautiful, rustic edges. Cut 4 small slits in the tops of each pie to allow steam to escape.

Preheat your air fryer to 385 degrees F (195 degrees C) following the manufacturer's instructions.

Spray the air fryer basket with cooking spray. Brush the tops of 2 pies with grapeseed oil for a golden sheen. Gently transfer the pies to the air fryer basket using a spatula.

Insert the basket and bake in the preheated air fryer until the pies are a rich, golden brown (approximately 8 minutes). Remove the pies from the basket and repeat with the remaining 2 pies.

In a small bowl, whisk together confectioners' sugar and milk until smooth and creamy. Brush this glaze over the warm pies. Allow the glaze to set slightly before serving. Serve warm or at room temperature and enjoy the comforting flavors of these delightful mini apple pies.

For an extra layer of flavor, consider adding a pinch of nutmeg or cardamom to the apple filling.
If you don't have grapeseed oil, melted butter or another neutral oil can be used to brush the tops of the pies.
These pies are best enjoyed fresh, but can be stored in an airtight container for up to 2 days. Reheat gently in the air fryer or oven before serving.
