While the pasta cooks, heat olive oil in a large, deep skillet over medium-low heat. Add sliced smoked sausage and cook, stirring occasionally, until lightly browned and the fat is rendered, about 3 minutes. (3 minutes)

Increase heat to medium-high. Add the frozen onion and pepper blend and Cajun seasoning. Cook, stirring frequently, until the vegetables are softened and fragrant, about 4 minutes. (4 minutes)

Pour in the heavy cream and bring to a gentle simmer. Cook, stirring occasionally, until the sauce has slightly thickened, about 5 minutes. (5 minutes)

Add the cooked pasta and Parmesan cheese to the skillet. Stir continuously until the pasta is evenly coated and the cheese is melted and incorporated, about 2 minutes. If the sauce is too thick, add reserved pasta water, one tablespoon at a time, until the desired consistency is reached. (2 minutes)

Serve immediately, garnished with chopped fresh parsley if desired.

For a spicier kick, add a pinch of red pepper flakes along with the Cajun seasoning.
Feel free to substitute other types of pasta, such as penne or rotini.
If you don't have a frozen seasoning blend, you can use 1/2 cup of chopped onions and 1/2 cup of chopped bell peppers.
For a richer flavor, use freshly grated Parmesan cheese.
