In a large bowl, gently combine the diced tomatoes, red bell pepper, cucumber, red onion, parsley, green onions, and cilantro. (5 minutes)

In a separate small bowl, whisk together the lime juice, olive oil, cider vinegar, salt, and black pepper until well combined. (2 minutes)

Allow the Vinagrete to stand at room temperature for at least 3 hours to allow the flavors to meld and develop. For optimal flavor, chill in the refrigerator for at least 30 minutes before serving. (3 hours, 30 minutes)

For a spicier kick, add a pinch of red pepper flakes or a finely minced jalapeño pepper to the slaw.
If you don't have cider vinegar on hand, white wine vinegar can be used as a substitute.
The Vinagrete can be prepared a day in advance. Store it in an airtight container in the refrigerator.
