In a large stockpot, gently place the whole chicken. Add enough water to completely submerge the chicken.

Introduce the ginger, lemongrass, and salt to the pot. Bring the mixture to a boil over high heat. (5 minutes)

Once boiling, reduce the heat to low, cover the pot, and allow the chicken to simmer gently for 1 hour to 1 1/2 hours, or until cooked through.

Carefully remove the chicken from the pot and set aside to cool slightly. Strain the broth through a fine-mesh sieve, returning the clear broth to the stockpot.

Once the chicken is cool enough to handle, remove the bones and skin. Shred or tear the chicken meat into bite-sized pieces. Set aside.

Stir the jasmine rice into the simmering broth. Bring the mixture back to a gentle boil, then reduce the heat to medium-low.

Cook for approximately 30 minutes, stirring occasionally to prevent sticking. If the congee becomes too thick, adjust the consistency by adding water. Season with additional salt, if needed.

Continue to cook the congee for up to an additional 45 minutes, stirring occasionally, until it reaches your desired consistency.

Ladle the finished congee into individual bowls. Top with shredded chicken, fresh cilantro, and chives.

Finish with a generous grind of black pepper and a squeeze of fresh lime juice to taste. Serve immediately.

For a richer flavor, consider using chicken broth instead of water. You can also add other vegetables, such as carrots or celery, to the broth while it simmers.
If you don't have fresh lemongrass, you can use 1 teaspoon of dried lemongrass. Be sure to remove it from the broth before serving.
The congee will thicken as it cools. If you are making it ahead of time, add a little extra water before reheating.
Feel free to customize the toppings to your liking. Some other popular toppings include fried shallots, chili flakes, and bean sprouts.
