For a richer flavor, lightly sauté the onion, carrot, and zucchini before adding them to the slow cooker. Adjust the amount of chili powder to your preference for heat. If you don't have fava beans, kidney beans or cannellini beans make a great substitute. Fresh spinach can be used in place of frozen, just add it in the last 15 minutes of cooking.
