Activate the Yeast: In a bowl, dissolve the yeast and a pinch of sugar in lukewarm milk. Let it stand until softened and foamy (5-10 minutes).

Prepare the Dough: Sift the flour into a large bowl and create a well in the center. Add the yeast mixture, melted butter, salt, vanilla extract, egg, and sugar. Gently mix until a dough forms.

Knead and Rise: Transfer the dough to a floured surface and knead until pliable and no longer sticky (about 5 minutes). Place the dough in a greased bowl, cover with a damp towel, and let rise in a warm place until doubled (1.5-2 hours). Punch down the dough, cover, and let rise again until doubled (about 1 hour).

Shape the Vatrushki: Grease a baking sheet with vegetable oil. Divide the dough into 4 equal parts, then divide each part into 3 pieces. Roll each piece into a ball and arrange them on the prepared baking sheet. Lightly flatten each ball and let them rise for 20 minutes.

Make the Filling: In a bowl, combine the farmer's cheese (or ricotta), egg, sugar, sour cream, and vanilla extract to create the filling.

Assemble and Rise Again: Use a water glass to make an indentation in the center of each dough piece. Spoon the filling into each indentation and brush the dough with beaten egg yolk. Repeat with the remaining dough and filling. Cover and let rise for 20-25 minutes.

Bake: Preheat oven to 400 degrees F (200 degrees C). Bake in the preheated oven until golden (15-20 minutes).

For a richer flavor, use browned butter in the dough.
If you don't have farmer's cheese, ricotta cheese is a great substitute. Make sure to drain any excess liquid from the ricotta before using.
A sprinkle of citrus zest (lemon or orange) in the cheese filling adds a bright, aromatic touch.
Brush the baked Vatrushki with melted butter and sprinkle with powdered sugar for an extra touch of sweetness.
