Cook, stirring occasionally, until the vegetables are tender and slightly caramelized (approximately 20 minutes). Transfer the cooked vegetables to a large bowl and set aside.

Using two knives, mince the eggs and vegetables together until they are well combined and broken down into smaller pieces. The mixture should have a slightly mushy consistency. This step is crucial for achieving the traditional Kaftaji texture.

In a separate small bowl, combine the harissa paste with water, adding 1 teaspoon at a time, until the harissa is pourable but still retains a thick consistency. Drizzle the harissa sauce over the Kaftaji mixture. Serve immediately and enjoy!

For an extra layer of flavor, consider adding a clove or two of minced garlic to the vegetables as they cook.
Adjust the amount of harissa to your preferred spice level. Start with less and add more to taste.
Traditionally, Kaftaji is served with crusty bread for scooping up the mixture. A side of olives or a simple salad also complements the dish well.
