Toast pecans in the preheated oven until fragrant and lightly golden, approximately 6-8 minutes. Allow to cool completely. (15 minutes)

In a medium saucepan, combine granulated sugar, light corn syrup, and dark corn syrup. Bring to a gentle boil over medium heat, stirring constantly until the sugar dissolves. Continue to boil for 2 minutes. Remove from heat and let cool slightly for about 10 minutes. (15 minutes)

In a large bowl, whisk the eggs until light and frothy. Gradually drizzle in the warm syrup mixture, whisking continuously to prevent the eggs from scrambling. Whisk in the melted butter, vanilla extract, and salt until the batter is smooth and homogenous. (5 minutes)

Lightly coat the inside of each of the 8 jars with cooking spray. Gently press pie crust dough pieces into the bottom and up the sides of each jar, creating a miniature pie crust. Distribute the toasted pecans evenly among the jars, forming a layer on top of the crust. Carefully spoon the pecan pie batter into each jar, leaving about ¼ inch of space at the top to allow for expansion during baking. (20 minutes)

Place the filled jars on a baking sheet and bake in the preheated oven for approximately 35-40 minutes, or until the filling is set and the crust is golden brown. Let the jars cool completely to room temperature on a wire rack before serving. The filling will continue to set as it cools. (60 minutes)

For an enhanced flavor, consider adding a tablespoon of bourbon or dark rum to the batter.
If the crust starts to brown too quickly during baking, cover the jars loosely with foil.
These pecan pies in a jar can be stored at room temperature for up to 3 days or refrigerated for up to a week. Ensure the lids are properly sealed if storing for an extended period.
Serve with a dollop of freshly whipped cream or a scoop of vanilla bean ice cream for an extra touch of indulgence.
