In a large skillet, combine the sausage links and water. Bring to a boil over high heat (about 5 minutes). Cover, reduce heat to low, and simmer until the sausage is cooked through and the juices run clear (about 15 minutes). Drain any remaining water from the skillet.

Return the skillet to medium heat and cook the sausage links, turning frequently, until nicely browned on all sides (2-4 minutes). Remove from the skillet and let cool slightly before slicing into 1/2-inch thick diagonal pieces. Wipe the skillet clean with a paper towel.

Heat the olive oil in the same skillet over medium heat. Add the chopped onion and cook until softened and translucent, but not browned (3-5 minutes). Add the minced garlic and cook until fragrant (about 30 seconds).

Stir in the crushed tomatoes, tomato paste, red wine, dried oregano, and crushed red pepper flakes. Add the diced bell pepper and sliced cooked sausage. Bring the sauce to a boil (about 5 minutes), then reduce the heat to low, cover, and simmer until the sauce has thickened to your liking (about 20 minutes).

While the sauce is simmering, bring a large pot of lightly salted water to a rolling boil. Add the fresh tortellini and cook, uncovered, stirring occasionally, until they float to the surface, are heated through, and are tender but still firm to the bite (5-10 minutes). Drain the tortellini well and return them to the warm pot.

Stir the chopped fresh parsley into the sausage and pepper mixture. Pour the sauce over the drained tortellini and toss gently to coat. Serve immediately and enjoy!

For a richer sauce, use a good quality, full-bodied red wine.
Feel free to add other vegetables like mushrooms or zucchini to the sauce.
If you prefer a spicier dish, add more crushed red pepper flakes to taste.
Garnish with grated Parmesan cheese for an extra touch of flavor.
