Follow The Directions

01

Step

In a large pot, bring salted water to a rolling boil. Add the scrubbed red potatoes and peeled garlic clove. (Prep time: 2 minutes)

02

Step

Boil the potatoes and garlic until the potatoes are fork-tender, approximately 15 minutes. (Cook time: 15 minutes)

03

Step

While the potatoes are boiling, remove the papery husks from the tomatillos and rinse them thoroughly. Add the tomatillos to the pot during the last 5 minutes of the potatoes' cooking time. (Prep time: 3 minutes, Cook time: 5 minutes)

04

Step

Once the potatoes and tomatillos are cooked, drain the water completely. (Drain time: 1 minute)

05

Step

Transfer the cooked potatoes, garlic, and tomatillos to a large bowl. Add the butter and milk. (Transfer time: 1 minute)

06

Step

Using a potato masher, mash the ingredients together until smooth, or until your desired consistency is achieved. Adjust the amount of milk and butter to reach the perfect creaminess. (Mash time: 3-5 minutes)

07

Step

Season generously with salt and freshly ground black pepper to taste. Serve hot and enjoy the vibrant flavors. (Season time: 1 minute)

For an even richer flavor, consider using heavy cream instead of milk.
Adding a tablespoon of sour cream or crème fraîche at the end can enhance the tangy profile.
If you prefer a chunkier mash, don't over-mash the potatoes. Leave some small pieces for texture.
Roasting the garlic beforehand will mellow the flavor and add a subtle sweetness to the mash.
