For extra flavor, add a few sprigs of fresh rosemary or thyme to the turkey cavity along with the apple. If the turkey skin starts to get too dark, tent it loosely with aluminum foil. Don't skip the resting step! It makes a huge difference in the final result. Use a roasting pan with a rack if you have one. This allows for better air circulation and crispier skin.
