Introduce the bell pepper, chile pepper, ginger, and garlic; continue to stir-fry for another 3 minutes. Pour in 1/4 of the coconut milk and incorporate the curry paste until thoroughly distributed.

Incorporate the sliced chicken, 1/4 cup of Thai basil, brown sugar, lime juice, and fish sauce. Cook, stirring frequently, until the chicken is cooked through and the juices run clear, around 7-10 minutes.

Pour in the remaining coconut milk and diced tomatoes into the pan. Bring the mixture to a boil, then reduce heat and simmer over medium heat for an additional 10-15 minutes. Serve hot, garnished with the remaining fresh basil and chopped scallions.

For a richer flavor, consider using full-fat coconut milk.
Adjust the amount of red curry paste to your preferred spice level. Start with less and add more to taste.
Fresh Thai basil is essential for the authentic flavor. If unavailable, substitute with regular basil, but the taste will be slightly different.
Serve with steamed jasmine rice for a classic Thai experience.
