For an extra layer of flavor and texture, consider adding 1/2 cup of your favorite chopped nuts or seeds to the batter before baking. Walnuts, pecans, or even sunflower seeds work wonderfully. To ensure the cake releases easily, you can also line the bottom of the pan with parchment paper in addition to greasing and flouring it. If you prefer a slightly less sweet cake, reduce the sugar by 1/4 cup. Make sure all of your ingredients are at room temperature for optimal blending and a more even bake. Serve warm or at room temperature. This cake is best enjoyed fresh but can be stored in an airtight container for up to 3 days.
