Follow The Directions

01

Step

Prepare the Fish: Cut the halibut into bite-sized pieces. In a mixing bowl, combine the fish with soy sauce and 1 tablespoon of flour. Ensure each piece is well-coated. Let it stand for 30 minutes, allowing the flavors to meld. (30 minutes)

02

Step

Heat the Oil: In a deep-fryer or a heavy saucepan, heat the oil to 375 degrees F (190 degrees C). Use a thermometer to ensure accurate temperature control.

03

Step

Deep-Fry the Fish: Carefully add the marinated halibut pieces to the hot oil. Fry until golden brown and crispy. Avoid overcrowding the fryer to maintain the oil temperature. (3-5 minutes)

04

Step

Drain and Set Aside: Remove the fried fish and place it on paper towels to drain excess oil. Set aside while you prepare the sauce.

05

Step

Sauté Vegetables: In a medium skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the diced bell pepper and onion. Sauté for 1 minute until slightly softened. Add the pineapple chunks and continue to cook for another minute.

06

Step

Create the Sauce: Stir in the reserved pineapple juice, ketchup, sugar, water, 2 teaspoons of flour, sesame oil, and a pinch of salt. Mix well to combine all ingredients.

07

Step

Simmer and Thicken: Cook the sauce, stirring occasionally, until it thickens to your desired consistency. This should take approximately 5 to 10 minutes.

08

Step

Combine and Serve: Pour the luscious sweet and sour sauce over the crispy halibut pieces to serve. Alternatively, serve the halibut alongside the sauce for dipping, allowing your guests to customize their experience.

For a richer flavor, consider adding a splash of rice vinegar or a dash of Worcestershire sauce to the sweet and sour sauce.
If you prefer a thicker sauce, add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons of cold water) towards the end of the cooking process.
Garnish with chopped green onions or sesame seeds for an added visual appeal.
Serve immediately for the best texture and flavor.

I used cod instead of halibut and it worked great. This is definitely going into my regular rotation.

The fish came out so crispy! Next time I’ll add some carrots for some added crunch.
