Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Line a 16-cup muffin tin with paper liners. (5 minutes)

02

Step

In a large bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy. (3 minutes)

03

Step

In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Stir in the vanilla sugar (or vanilla extract). (5 minutes)

04

Step

Divide the dough in half, then divide each half into 8 equal pieces. Roll each piece into a smooth ball. (5 minutes)

05

Step

Place each dough ball into a prepared muffin cup. Use your thumb (lightly coated in flour to prevent sticking) to make a small indentation in the center of each ball, creating a 'cave'. (5 minutes)

06

Step

Fill each indentation with a teaspoon of raspberry jam. (3 minutes)

07

Step

Bake in the preheated oven for 18-22 minutes, or until the cookies are lightly golden brown around the edges. (20 minutes)

08

Step

Let the cookies cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. (10 minutes)

For a richer flavor, use European-style butter.
If you don't have vanilla sugar, you can substitute 1 teaspoon of vanilla extract. Add it along with the flour.
Feel free to experiment with different flavors of jam. Lingonberry jam is a traditional Swedish choice!
The dough can be a little crumbly, but it should come together as you roll it. Avoid overmixing.

The dough was a little dry, so I added a tablespoon of milk. They turned out perfectly!
