Grill the Burger Patties: Preheat an outdoor grill to medium-high heat and lightly oil the grate. Place the patties on the preheated grill and cook for about 6 minutes on one side, until browned. Flip the patties and continue grilling for another 6 minutes, or until they are no longer pink in the center and an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C). Melt the Cheese: Transfer the cooked burgers to a plate and top each with a slice of sharp Cheddar cheese. Cover the plate tightly with foil to allow the cheese to melt from the burger's residual heat. (2 minutes)

Cook the Eggs: Heat a nonstick skillet over medium heat and lightly coat with cooking spray. Crack the remaining eggs into the skillet, immediately reduce the heat to low, and season with salt and pepper. Cook until the whites are set, about 2 minutes. Add 1 tablespoon of water to the skillet, cover, and cook for 1 to 2 minutes more to steam the tops of the eggs. (5 minutes)

Assemble the Burgers: Spread about 1 tablespoon of the prepared chipotle aioli on the bottom half of each hamburger bun. Top with a lettuce leaf, a slice of red onion, a slice of tomato, and a cheesy burger patty. Carefully place a sunnyside-up egg on top of each burger and crown it with the top half of the hamburger bun. Serve immediately and enjoy! (5 minutes)

For an extra layer of flavor, consider grilling the onions before assembling the burgers.
If you prefer a less runny egg, cook the eggs for a slightly longer time.
Make the chipotle aioli a day in advance to allow the flavors to fully develop.
