For a richer flavor, toast the sunflower seeds lightly in a dry pan before soaking. Be careful not to burn them! The pate can be stored in an airtight container in the refrigerator for up to 3 days. Experiment with different herbs! Fresh dill, parsley, or chives would also be delicious additions. If you don't have collard greens, you can serve the pate with crackers, crudités, or spread on toast.
