Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until tender yet firm to the bite (al dente), about 8-10 minutes. Drain and rinse under cold water.

In a large serving bowl, combine the cooked pasta, red pepper, zucchini, red onion, salami, pepperoni, mozzarella cheese, artichoke hearts, olives, and broccoli. Pour in 1 cup of the Italian dressing and mix until well combined. Cover and chill in the refrigerator until ready to serve.

Right before serving, toss the pasta salad with the remaining 1 cup of dressing, Parmesan cheese, parsley, garlic, salt, and pepper until well combined. Garnish with tomato wedges.

For a vegetarian option, omit the salami and pepperoni and add more vegetables such as yellow bell pepper, carrots, or cucumbers.
Feel free to experiment with different types of cheese, such as provolone or feta.
Prepare the salad a day in advance to allow the flavors to meld together. The pasta will absorb the dressing, resulting in a more flavorful salad.
Adjust the amount of dressing to your preference. Some people prefer a drier salad, while others like it more heavily dressed.
If you don't have fresh parsley on hand, you can use dried parsley. Use about 1 tablespoon of dried parsley in place of 2 tablespoons of fresh parsley.
