Cook the Bacon: In a skillet over medium heat, cook the bacon until crisp and golden brown. (8 min) Remove the bacon from the skillet and place it on a paper towel-lined plate to drain. Once cooled, crumble the bacon into bite-sized pieces.

Assemble the Salad: In a large salad bowl, combine the spinach, mushrooms, strawberries, red onion, kiwi, orange segments, chopped eggs, and crumbled bacon. Gently toss to combine.

Prepare the Dressing: In a separate small bowl, whisk together the ketchup, water, olive oil, brown sugar, apple cider vinegar, and spicy brown mustard until well combined. Season with garlic powder, salt, and pepper to taste.

Dress and Serve: Pour the dressing over the salad and toss gently to coat. Sprinkle the seasoned croutons over the top of the salad just before serving to maintain their crispness. Enjoy immediately!

For a vegetarian option, omit the bacon and consider adding toasted walnuts or pecans for extra crunch and flavor.
If you don't have apple cider vinegar, white wine vinegar or balsamic vinegar can be used as substitutes. Adjust the amount to taste.
The dressing can be made ahead of time and stored in an airtight container in the refrigerator for up to 3 days. Be sure to whisk it again before using.
