Slowly pour in enough evaporated milk, stirring constantly, until the desired consistency is reached. Season with salt. Continue to cook and stir over low heat until warmed through (at least 5 minutes more).

For a richer flavor, consider using a combination of pepper jack and Monterey Jack cheese.
Adjust the amount of jalapeño to control the spice level. For extra heat, leave some of the seeds in.
Be sure to squeeze as much moisture as possible from the spinach to prevent a watery dip.
Serve warm with tortilla chips, veggies, or toasted baguette slices.
