Step

Gently place eggs in a saucepan and cover completely with cold water. Bring to a rolling boil over medium-high heat, then immediately remove from heat. Cover the saucepan and let the eggs stand in the hot water for 15 minutes. (15 minutes)

Carefully remove the eggs from the hot water and transfer them to a bowl of ice water to cool completely. Once cooled, gently peel the eggs. (5 minutes)

Slice each egg lengthwise. Carefully remove the yolks and place them in a medium-sized mixing bowl. (3 minutes)

Add the mayonnaise, Dijon mustard, salt, and pepper to the bowl with the yolks. Mash the yolks with a fork until smooth and then stir all ingredients until thoroughly combined and creamy. (3 minutes)

Spoon the deviled yolk mixture back into the hollow of each egg white half. For a more refined presentation, transfer the yolk mixture to a piping bag fitted with a decorative tip (or use a sturdy plastic bag with a corner snipped off) and pipe the filling into each egg. (5 minutes)

To create the spiders, cut 6 of the olives in half lengthwise to create the spider bodies. Place one olive half, cut-side down, on top of each filled egg half. (3 minutes)

Cut the remaining 6 olives in half lengthwise, and then cut each half into 4 thin strips to create the spider legs. You should have 8 strips per olive half. (5 minutes)

Arrange 4 olive strips (legs) on each side of the olive body, gently pressing them into the yolk mixture to secure them. (5 minutes)

Lightly dust the spider deviled eggs with a pinch of paprika for a touch of color and visual appeal. (1 minute)

For a richer flavor, consider using homemade mayonnaise.
If you don't have Dijon mustard, yellow mustard can be substituted, but the flavor will be slightly different.
To prevent a green ring from forming around the yolks, avoid overcooking the eggs and cool them quickly in ice water.
For an extra touch, use green food coloring to tint the deviled yolk mixture for a more ghoulish green color.
These eggs can be prepared a day in advance. Keep them covered and refrigerated until ready to serve. Add the olive spiders just before serving to prevent the olives from drying out.
