Step

Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with parchment paper. (5 minutes)

Make a V-shaped cut in each roll, leaving the ends intact. Lift out the V-shaped wedge. Hollow out the rolls gently to create shallow bread bowls, being careful not to cut through the bottom or sides. Place the prepared bread bowls on the prepared baking sheet. (10 minutes)

In a bowl, whisk the eggs. Add milk and continue to whisk until well blended. Stir in the chopped green chile peppers, Cheddar cheese, pepper Jack cheese, smoked paprika, and salt. Pour the mixture slowly into the prepared rolls, spreading evenly with a spoon. (10 minutes)

Bake in the preheated oven until the egg mixture is completely set and the cheese is lightly browned, approximately 30 minutes. Cool for 3 minutes before serving. (33 minutes)

For an extra layer of flavor, consider adding a sprinkle of your favorite hot sauce before baking.
Feel free to customize the cheese blend to your liking. Monterey Jack or Colby Jack would also work well.
If you don't have parchment paper, you can lightly grease the baking sheet instead.
