In a large, heavy-bottomed skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches a temperature of 325-350°F (160-175°C). Carefully place the chicken pieces in the hot oil, being careful not to overcrowd the pan. Fry the chicken in batches, turning occasionally, until golden brown and the internal temperature reaches 165°F (74°C). This should take approximately 15-20 minutes per batch, depending on the size of the chicken pieces. (30-40 minutes)
