Prepare the Sous Vide Bath: Fill a large pot with warm water, ensuring at least 3 inches of space from the rim. Attach a sous vide cooker and set the temperature to 175°F (80°C). Set the timer for 1 hour. (5 minutes)

Prepare the Pears: Gently peel the pear. Halve it lengthwise and use a small spoon or melon baller to remove the core and seeds. (10 minutes)

Infuse and Seal: Place the pear halves into a resealable plastic bag or a reusable silicone bag. Add the butter, brown sugar, and vanilla extract. (5 minutes)

Sous Vide Poach: Remove as much air as possible from the bag using the water displacement method (or a vacuum sealer). Seal the bag tightly. Submerge the bag into the preheated water bath, ensuring the top of the bag remains above the waterline. Cook for 1 hour. (1 hour)

Plate and Serve: Carefully remove the bag from the water bath. Gently place the poached pear halves onto dessert plates. Drizzle generously with the flavorful cooking liquid from the bag. Serve warm or chilled, with a scoop of ice cream, whipped cream, or mascarpone. (5 minutes)

For even cooking, ensure the pears are of similar size and ripeness.
If using a vacuum sealer, be gentle to avoid crushing the pears.
Feel free to experiment with other flavorings such as cinnamon, cardamom, or a splash of bourbon.
Poached pears can be stored in their cooking liquid in the refrigerator for up to 3 days.
