For a vegetarian option, skip the bacon and use 2 tablespoons of olive oil or other vegetable oil to sauté the onions. You can also add a teaspoon of smoked paprika to mimic the smoky flavor of the bacon.
Adjust the amount of brown sugar to your taste. For a less sweet dish, start with 1/4 cup and add more as needed.
Chicken broth adds a richer flavor than water. You can also use vegetable broth for a vegetarian version.
