Follow The Directions

01

Step

In a medium bowl, mash the jellied cranberry sauce with a fork. Stir in the cranberry juice, sugar, dry mustard, ground cloves, and salt until well combined. (5 minutes)

02

Step

Place the pork loin roast in a slow cooker. Pour the cranberry mixture evenly over the roast, ensuring it's well coated. (2 minutes)

03

Step

Cover the slow cooker and cook on Low for 6 to 8 hours, or until the pork is tender and easily shreds with a fork. (6-8 hours)

04

Step

Once the pork is cooked, transfer it to a cutting board and tent with foil to keep warm. (2 minutes)

05

Step

Skim any excess fat from the cranberry sauce remaining in the slow cooker. Transfer the sauce to a liquid measuring cup. If necessary, add water to bring the total volume to 2 cups. (5 minutes)

06

Step

Pour the cranberry sauce into a saucepan and bring to a gentle boil over medium heat. (5 minutes)

07

Step

In a small bowl, whisk together the cold water and cornstarch to create a slurry. (2 minutes)

08

Step

Slowly pour the cornstarch slurry into the boiling cranberry sauce, stirring constantly. Continue to cook and stir until the sauce thickens to your desired consistency, about 5 to 10 minutes. (5-10 minutes)

09

Step

Slice the pork loin roast and serve immediately, drizzled generously with the thickened cranberry sauce.

For a richer flavor, try using whole berry cranberry sauce instead of jellied. You may need to mash the berries slightly before mixing with the other ingredients.
If you prefer a less sweet sauce, reduce the amount of sugar to 1/8 cup.
The cooking time may vary depending on your slow cooker. Check the internal temperature of the pork with a meat thermometer to ensure it reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
Leftover cranberry pork roast is delicious in sandwiches, salads, or as a topping for baked potatoes.

My slow cooker runs hot, so I cooked it on Low for only 5 hours and it was perfect.
