For perfectly poached eggs, use the freshest eggs possible. The fresher the egg, the less the white will spread in the water. To keep poached eggs warm while you prepare the hollandaise, place them in a bowl of warm water. If your hollandaise sauce breaks (separates), whisk in a tablespoon of ice water to bring it back together. Feel free to experiment with different types of sausage. Chorizo or Italian sausage would also be delicious. For an extra touch of elegance, garnish with fresh chives or a sprinkle of smoked paprika.
