Roast in the preheated oven until the tomatoes are softened and bubbling, approximately 25 minutes. Increase the oven temperature to 425 degrees F (220 degrees C) and roast for another 10 minutes, or until the tomatoes just begin to caramelize and brown at the edges. Turn off the oven and let the tomatoes rest inside with the door closed for a final 5 minutes to deepen the caramelized flavor. (40 minutes)

Transfer the roasted tomatoes and garlic to a bowl. Add the torn basil leaves. Using a wooden spoon or potato masher, gently crush the mixture to break apart the tomatoes, leaving it a bit chunky for a rustic texture. If desired, remove the skins from the tomatoes at this point. (5 minutes)

Serve immediately over your favorite cooked pasta. Garnish with additional fresh basil, if desired.

For a smoother sauce, use an immersion blender to puree the roasted tomatoes after crushing them.
Add a pinch of red pepper flakes during roasting for a touch of heat.
This sauce can be made ahead of time and stored in the refrigerator for up to 3 days, or frozen for longer storage.
Experiment with adding other herbs, such as oregano or thyme, for a different flavor profile.
