For a vegetarian version, omit the bacon and use vegetable broth. You can add a sprinkle of smoked paprika to mimic the smoky flavor.
Don't overcook the potatoes! They should be tender but still hold their shape.
Feel free to adjust the amount of vinegar and oil to your liking. Some people prefer a more tart salad, while others like it a bit richer.
This salad is even better the next day as the flavors have time to meld together.
