Follow The Directions

01

Step

Cut the potatoes into large, even-sized chunks, leaving the skins on for added texture and nutrients. (5 minutes)

02

Step

Combine the potato chunks and 1 1/2 cups of water in a stovetop pressure cooker.

03

Step

Secure the lid of the pressure cooker according to the manufacturer's instructions. Place the pressure regulator over the vent. Heat over medium-high heat until steam escapes in a steady flow, creating a whistling sound. (Approximately 10 minutes).

04

Step

Reduce the heat to medium, adjusting so the regulator rocks gently. Cook for 10 minutes.

05

Step

Remove from heat and allow the pressure to release naturally according to the manufacturer's instructions. (5-10 minutes)

06

Step

Carefully unlock and remove the lid of the pressure cooker.

07

Step

Drain the water from the potatoes.

08

Step

Mash the potatoes thoroughly using a potato masher or ricer until smooth. Stir in the margarine until melted and evenly distributed.

09

Step

Incorporate the pumpkin puree, salt, pumpkin pie spice, and dried basil. Stir until all ingredients are well combined and the mixture is a uniform color. Taste and adjust seasonings as needed.

For a smoother consistency, use a potato ricer instead of a masher.
Feel free to adjust the amount of pumpkin pie spice to your preference. A pinch of nutmeg or cinnamon can also be added.
Mashed potatoes can be made ahead of time and reheated gently over low heat or in the microwave with a splash of milk or broth to restore moisture.
For a richer flavor, substitute butter for margarine.
If you don't have a pressure cooker, you can boil the potatoes in a large pot until tender, about 15-20 minutes.
