For an extra touch of flavor, try adding a teaspoon of vanilla extract to the wet ingredients. If you don't have walnuts on hand, pecans or other nuts work well too. Store the cooled loaf in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. To freeze, wrap the cooled loaf tightly in plastic wrap and then in foil. It can be frozen for up to 2 months. Thaw overnight in the refrigerator before serving.
