For a richer flavor, use a high-quality vanilla extract and freshly grated nutmeg. If the graham cracker crust starts to brown too quickly during baking, cover the edges with aluminum foil. To prevent cracking, you can also bake the cheesecake in a water bath. Wrap the bottom of the springform pan in aluminum foil and place it inside a larger pan. Pour hot water into the larger pan until it reaches about halfway up the sides of the springform pan. Bake as directed.
